  • Preheat your oven to 200°C (180°C for fan ovens) or gas mark 6.
  • In a small bowl, combine the torn mozzarella, grated cheddar, and wholegrain mustard.
  • Stir well until all ingredients are evenly mixed.

Step 2: Stuff the chicken

  • Take each chicken breast and carefully cut a slit along the side, making a pocket for the filling.
  • Be careful not to cut all the way through.
  • Spoon the cheese and mustard mixture into the slit of each chicken breast, making sure it’s well-stuffed.

Step 3: Wrap with bacon

  • Wrap two slices of smoked streaky bacon around each stuffed chicken breast.
  • Wrap it firmly, but not too tightly, as this will hold the filling inside during cooking.

Step 4: Season and roast

  • Place the wrapped chicken breasts on a baking sheet, season with a little salt and pepper, and pop them into the preheated oven.
