- 125g mozzarella ball, torn into small pieces
- 50g strong cheddar, grated

- 4 skinless, boneless chicken breast fillets

Step 1: Prepare the filling
- Preheat your oven to 200°C (180°C for fan ovens) or gas mark 6.
- In a small bowl, combine the torn mozzarella, grated cheddar, and wholegrain mustard.
- Stir well until all ingredients are evenly mixed.
Step 2: Stuff the chicken
- Take each chicken breast and carefully cut a slit along the side, making a pocket for the filling.
- Be careful not to cut all the way through.
- Spoon the cheese and mustard mixture into the slit of each chicken breast, making sure it’s well-stuffed.
Step 3: Wrap with bacon
- Wrap two slices of smoked streaky bacon around each stuffed chicken breast.
- Wrap it firmly, but not too tightly, as this will hold the filling inside during cooking.
Step 4: Season and roast
- Place the wrapped chicken breasts on a baking sheet, season with a little salt and pepper, and pop them into the preheated oven.
- Roast for 20-25 minutes until the bacon is crispy and the chicken is cooked through (no pink in the center).
