Simple Italian-Style Mustard-stuffed Chicken

This easy recipe features chicken breasts stuffed with a cheesy mustard filling, wrapped in crispy bacon, and roasted to perfection for a flavorful and beginner-friendly meal.

Ingredients
  

  • 125 grams mozzarella ball torn into small pieces
  • 50 grams strong cheddar grated
  • 1 tbsp wholegrain mustard
  • 4 chicken breast fillets ( skinless and boneless)
  • 8 smoked streaky bacon rashers

Instructions
 

Prepare the filling

  • Preheat your oven to 200°C (180°C for fan ovens) or gas mark 6.
    In a small bowl, combine the torn mozzarella, grated cheddar, and wholegrain mustard.
    Stir well until all ingredients are evenly mixed.

Stuff the chicken

  • Take each chicken breast and carefully cut a slit along the side, making a pocket for the filling.
    Be careful not to cut all the way through.
    Spoon the cheese and mustard mixture into the slit of each chicken breast, making sure it's well-stuffed.

Wrap with bacon

  • Wrap two slices of smoked streaky bacon around each stuffed chicken breast.
    Wrap it firmly, but not too tightly, as this will hold the filling inside during cooking.

Season and roast

  • Place the wrapped chicken breasts on a baking sheet, season with a little salt and pepper, and pop them into the preheated oven.
    Roast for 20-25 minutes until the bacon is crispy and the chicken is cooked through (no pink in the center).

Serve and enjoy!

  • Once cooked, remove the chicken from the oven and let it rest for a couple of minutes before serving.
