- 1/2 red chilli, deseeded and finely chopped (or use dried chilli flakes)
- 300g spaghetti

- Heat 1 tablespoon of olive oil in a large pan over medium-high heat.
- Add the sliced mushrooms and fry for about 3 minutes, stirring occasionally until they’re golden and softened.
- Add the sliced garlic to the mushrooms, frying for another 1 minute until fragrant.
- Once cooked, transfer the garlic and mushrooms to a bowl and mix with the chopped parsley. Set aside.
Step 2: Prepare the Sauce
- In the same pan, heat the remaining 1 tablespoon of olive oil.
- Add the chopped onion and celery, cooking for around 5 minutes until they become soft and slightly golden.
- Stir in the chopped tomatoes, chilli, and a pinch of salt.
- Bring everything to a boil, then reduce the heat.
- Let the sauce simmer uncovered for about 10 minutes to allow it to thicken slightly.

- While the sauce simmers, cook the spaghetti according to the package instructions in a pot of salted boiling water.
- Once the spaghetti is cooked, drain it well.
