Instructions

Step 1: Prep the Chicken

In a bowl, combine chicken strips, paprika, dried oregano, dried basil, and a pinch of sea salt. Toss well to coat the chicken evenly.

Step 2: Assemble the Baking Dish

Preheat oven to 200°C (fan 180°C) / 400°F / Gas Mark 6. In an ovenproof baking dish, add the canned chopped tomatoes, grape tomatoes, diced red bell pepper, chopped onion, and minced garlic. Nestle the seasoned chicken strips evenly among the vegetables. Create a space in the center and place the feta cheese block. Sprinkle everything with black pepper, dried mixed herbs, and chili flakes (if using). Drizzle extra virgin olive oil evenly over the top.

Step 3: Bake Until Golden & Caramelized

Transfer the baking dish to the oven and bake for 35 minutes until the tomatoes burst, the feta caramelizes, and the chicken is cooked through.

Step 4: Cook the Pasta

While the feta and tomatoes are baking, bring a large pot of salted water to a boil. Add the penne pasta and cook until al dente according to the package instructions. Before draining, reserve 60ml (¼ cup) of the pasta water.

Step 5: Mash & Mix the Sauce

Remove the baking dish from the oven. Using a wooden spoon, mash the feta and roasted tomatoes, mixing everything together into a creamy sauce.

Add the cooked pasta and reserved pasta water directly into the baking dish. Stir well until all the pasta is coated in the creamy feta sauce.
