The BEST and Easy Spicy Udon Stir Fry

This quick and customizable Spicy Udon Stir Fry is ready in just 15 minutes! Packed with bold flavors, it’s perfect for busy nights. Add your favorite veggies or protein for a delicious, versatile meal.

Ingredients
  

Prepare Ingredients

  • 1 tbsp vegetable oil (or other neutral oil)
  • ½ medium onion sliced or diced
  • 1 medium carrot spiralized or grated
  • 1 cup green onion, sliced diagonally (green tops only)
  • 3 cups baby spinach
  • 14 oz (400g) soft vacuum-packed udon noodles

For the Sauce

  • 1-2 tsp Sambal Oelek (or Sriracha/Chili Garlic Sauce, to taste)
  • ¼ cup soy sauce
  • 2 tsp rice wine vinegar
  • 1 tsp sesame oil
  • 2 tbsp brown sugar
  • 2 cloves garlic minced
  • 1 tbsp fresh ginger minced

For Garnish

  • Sesame seeds
  • Additional sliced green onion
  • ¼ cup chopped parsley or cilantro

Instructions
 

Prepare Ingredients

  • Chop vegetables and mix the sauce ingredients in a small bowl.
    If desired, soak noodles in hot water to separate.

Cook Vegetables

  • Heat oil in a hot wok.
    Add carrots and stir-fry for a minute, then toss in onions and cook until softened.
    Add green onions and cook briefly.

Add Noodles

  • Drain soaked noodles (if applicable) and add to the wok.
    Stir-fry for a minute to remove any water.

Combine

  • Pour in the sauce and toss until everything is coated.
    Add spinach and stir until wilted.

Serve

  • Transfer to bowls, garnish with sesame seeds, green onion, and parsley or cilantro. Enjoy hot!

Notes

    • Frozen udon noodles are my top pick for their great texture and flavor. Simply soak them in hot water for a few minutes, drain, and they’re ready to use.
    • If using dried udon, boil them according to the package instructions before adding them to the stir fry.
    • This recipe serves 2 as a main dish or 4 as a side dish. To serve more, simply double the ingredients.
