  • 2 lb baby potatoes halved or quartered
  • ¼ cup olive oil
  • 1 tbsp Italian seasoning
  • 3 cloves garlic minced
  • ¼ cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Instructions
 

Prep the Potatoes

  • Start by placing the halved or quartered baby potatoes in the slow cooker.

Make the Seasoning Mix

  • In a small bowl, combine the olive oil, Italian seasoning, minced garlic, Parmesan cheese, salt, and pepper. Stir until everything is well mixed.

Coat the Potatoes

  • Pour the seasoning mixture over the potatoes in the slow cooker.
    Toss the potatoes until they are all evenly coated.

Cook the Potatoes

  • Cover the slow cooker and set it to cook on low for 4-5 hours, or until the potatoes are tender when pierced with a fork.
