Quick Italian Spicy Spaghetti With Garlic Mushroom

Ingredients
  

  • 2 tbsp olive oil
  • 250 grams chestnut mushrooms thickly sliced
  • 1 garlic clove thinly sliced
  • A small bunch of parsley leaves only
  • 1 celery stick finely chopped
  • 1 onion finely chopped
  • 400 grams can chopped tomatoes
  • 1/2 red chilli deseeded and finely chopped (or use dried chilli flakes)
  • 300 grams spaghetti

Instructions
 

Cook the Mushrooms

  • Heat 1 tablespoon of olive oil in a large pan over medium-high heat.
    Add the sliced mushrooms and fry for about 3 minutes, stirring occasionally until they're golden and softened.
    Add the sliced garlic to the mushrooms, frying for another 1 minute until fragrant.
    Once cooked, transfer the garlic and mushrooms to a bowl and mix with the chopped parsley. Set aside.

Prepare the Sauce

  • In the same pan, heat the remaining 1 tablespoon of olive oil.
    Add the chopped onion and celery, cooking for around 5 minutes until they become soft and slightly golden.
    Stir in the chopped tomatoes, chilli, and a pinch of salt.
    Bring everything to a boil, then reduce the heat.
    Let the sauce simmer uncovered for about 10 minutes to allow it to thicken slightly.

Cook the Spaghetti

  • While the sauce simmers, cook the spaghetti according to the package instructions in a pot of salted boiling water.
    Once the spaghetti is cooked, drain it well.

Assemble and Serve

  • Toss the drained spaghetti with the tomato sauce, making sure it’s evenly coated.
    Top the dish with the garlicky mushrooms and parsley mixture.
    Serve hot and enjoy!
