- 2 tbsp chopped olives or sundried tomatoes (whatever you have on hand)
- 1 clove garlic , crushed
- ½ tsp mixed herbs dried
- 200 grams full-fat soft cheese
- 4 chicken breast boneless, skinless
- 4 ripe tomatoes sliced
- Olive oil for drizzling
Prepare the Cheese Mixture and Chicken
Preheat your oven to 220°C (200°C fan) or Gas Mark 7.In a bowl, mix the chopped olives or sundried tomatoes, crushed garlic, and most of the dried herbs into the soft cheese. Season with a bit of salt and pepper.Cut a slit along the side of each chicken breast to create a pocket. Be careful not to cut all the way through.
Stuff and Assemble
Spoon a quarter of the cheese mixture into each chicken breast pocket, then press the sides together to seal.Place the stuffed chicken breasts on a greased baking tray.Arrange the tomato slices on top of each chicken breast, overlapping slightly.Season the tomatoes and chicken with a bit more salt, pepper, and the remaining herbs. Drizzle with olive oil.
Roast and Serve
Roast in the preheated oven for 20 minutes, or until the chicken is golden around the edges and the tomatoes look slightly shriveled.Serve hot with a crisp green salad for a fresh and satisfying meal.
