Step 1: Prepare the Cheese Mixture and Chicken

  • Preheat your oven to 220°C (200°C fan) or Gas Mark 7.
  • In a bowl, mix the chopped olives or sundried tomatoes, crushed garlic, and most of the dried herbs into the soft cheese. Season with a bit of salt and pepper.
  • Cut a slit along the side of each chicken breast to create a pocket. Be careful not to cut all the way through.

Step 2: Stuff and Assemble

  • Spoon a quarter of the cheese mixture into each chicken breast pocket, then press the sides together to seal.
  • Place the stuffed chicken breasts on a greased baking tray.
  • Arrange the tomato slices on top of each chicken breast, overlapping slightly.
  • Season the tomatoes and chicken with a bit more salt, pepper, and the remaining herbs. Drizzle with olive oil.
