Easy Italian Pork Noodle Stir-fry
This quick and easy pork stir-fry combines lean pork mince, vibrant stir-fry vegetables, and egg noodles in a savory-sweet sauce, perfect for beginners.

- 3 tbsp sesame oil
- 350 grams lean pork mince
- 350 grams egg noodles
- Thumb-sized piece of ginger peeled and finely chopped (or 1½ tbsp ginger purée)
- 3 garlic cloves crushed (or 1 tbsp garlic purée)
- 320 grams stir-fry vegetables (use a mix like mangetout, baby sweetcorn, beansprouts, carrots, and peppers)
- 4 tbsp low-salt soy sauce
- 2 tsp cornflour
- 4 tbsp sweet chilli sauce
Cook the Pork
Heat 3 tbsp of sesame oil in a large wok or frying pan over medium-high heat.Add the lean pork mince, breaking it up with a spoon as it cooks.Fry for about 8 minutes, or until the pork is browned all over.
Prepare the Noodles
While the pork cooks, boil a kettle of water.Place the egg noodles in a heatproof bowl, pour the boiled water over them, and let them sit for 5-10 minutes to soften.Drain the noodles and set them aside.
Stir-Fry the Vegetables
Add the chopped ginger and crushed garlic to the pork in the pan.Stir-fry for 2-3 minutes to let the flavors blend.Toss in the stir-fry vegetables and continue to stir-fry for a few more minutes until the veggies are slightly softened but still crisp.
Make the Sauce
In a small bowl, mix 1 tbsp of soy sauce with the cornflour to create a paste.Add the remaining soy sauce, sweet chilli sauce, and 2 tbsp of water to the cornflour paste.Pour this sauce mixture into the pan with the pork and vegetables.
Combine Noodles and Sauce
Add the softened, drained noodles to the wok.Stir everything together, making sure the noodles are well-coated with the sauce.If the stir-fry looks a bit dry, add a splash of water to help coat the noodles.
Serve
Once everything is combined and heated through, remove from the heat.Serve immediately and enjoy your tasty pork stir-fry!
