Easy Italian Pork Noodle Stir-fry

This quick and easy pork stir-fry combines lean pork mince, vibrant stir-fry vegetables, and egg noodles in a savory-sweet sauce, perfect for beginners.

Ingredients
  

  • 3 tbsp sesame oil
  • 350 grams lean pork mince
  • 350 grams egg noodles
  • Thumb-sized piece of ginger peeled and finely chopped (or 1½ tbsp ginger purée)
  • 3 garlic cloves crushed (or 1 tbsp garlic purée)
  • 320 grams stir-fry vegetables (use a mix like mangetout, baby sweetcorn, beansprouts, carrots, and peppers)
  • 4 tbsp low-salt soy sauce
  • 2 tsp cornflour
  • 4 tbsp sweet chilli sauce

Instructions
 

Cook the Pork

  • Heat 3 tbsp of sesame oil in a large wok or frying pan over medium-high heat.
    Add the lean pork mince, breaking it up with a spoon as it cooks.
    Fry for about 8 minutes, or until the pork is browned all over.

Prepare the Noodles

  • While the pork cooks, boil a kettle of water.
    Place the egg noodles in a heatproof bowl, pour the boiled water over them, and let them sit for 5-10 minutes to soften.
    Drain the noodles and set them aside.

Stir-Fry the Vegetables

  • Add the chopped ginger and crushed garlic to the pork in the pan.
    Stir-fry for 2-3 minutes to let the flavors blend.
    Toss in the stir-fry vegetables and continue to stir-fry for a few more minutes until the veggies are slightly softened but still crisp.

Make the Sauce

  • In a small bowl, mix 1 tbsp of soy sauce with the cornflour to create a paste.
    Add the remaining soy sauce, sweet chilli sauce, and 2 tbsp of water to the cornflour paste.
    Pour this sauce mixture into the pan with the pork and vegetables.

Combine Noodles and Sauce

  • Add the softened, drained noodles to the wok.
    Stir everything together, making sure the noodles are well-coated with the sauce.
    If the stir-fry looks a bit dry, add a splash of water to help coat the noodles.

Serve

  • Once everything is combined and heated through, remove from the heat.
    Serve immediately and enjoy your tasty pork stir-fry!
