Ingredients
  

  • 2 tbsp olive oil
  • 1 lb ground Italian sausage
  • 1 small onion diced
  • 3 cloves garlic minced
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 8 oz lasagna noodles broken into bite-sized pieces
  • 1 cup grated parmesan cheese
  • 2 cups shredded mozzarella cheese

  • 1 tsp dried basil
  • 1 tsp dried oregano
  • salt and pepper to taste
  • fresh parsley chopped (for garnish)

Instructions
 

  • Cook the Sausage:
    Heat olive oil in a large pot over medium heat.
    Add ground Italian sausage and cook until browned and crumbly, about 5-7 minutes.
    Drain excess fat if needed.
  • Sauté Vegetables:
    Add diced onion and minced garlic to the pot.
    Cook until softened and fragrant, about 3 minutes.
  • Simmer the Soup:
    Pour in chicken broth and bring to a boil.
    Reduce heat and add broken lasagna noodles.
    Let simmer until noodles are tender, about 10-12 minutes.
  • Add Cream and Cheese:
    Stir in heavy cream, Parmesan cheese, dried basil, and oregano.
    Season with salt and pepper to taste.

    Add shredded mozzarella cheese, stirring until melted and the soup is thick and creamy.
