Ingredients
- 1 pound Italian sausage (adds amazing flavor)
- 1 small onion, diced
- 1 green bell pepper, diced
- 1 jar marinara sauce (24 oz, any brand you love)
- 4 cups beef broth
- 8 oz lasagna noodles, broken into pieces
- 1 cup shredded Italian cheese blend (mozzarella, parmesan, etc.)
- 1/2 cup ricotta cheese (optional, for topping)
Instructions
- Cook the sausage and veggies: In a large skillet over medium heat, sauté the Italian sausage, onion, and green bell pepper until the sausage is browned and the veggies are softened. Drain any excess grease if needed.
- Combine in the crock pot: Add the sausage mixture, marinara sauce, and beef broth to your crock pot. Stir to combine.
- Cook: Cover and cook on low for 4-6 hours or high for 2-3 hours.
- Add the noodles: About 30 minutes before serving, break the lasagna noodles into pieces and stir them into the soup. Let them cook until tender.
- Serve and garnish: Spoon the soup into bowls and top with shredded Italian cheese blend. Add a dollop of ricotta cheese for extra creaminess if desired.
Notes
- Time-Saving Tip: Use pre-cooked ground sausage crumbles and frozen diced onions and peppers to cut down on prep time.
- Substitute Noodles: Swap lasagna noodles for your favorite short pasta like rotini or bowties.
