Ingredients

  • 1 pound Italian sausage (adds amazing flavor)
  • 1 small onion, diced
  • 1 green bell pepper, diced
  • 1 jar marinara sauce (24 oz, any brand you love)
  • 4 cups beef broth
  • 8 oz lasagna noodles, broken into pieces
  • 1 cup shredded Italian cheese blend (mozzarella, parmesan, etc.)
  • 1/2 cup ricotta cheese (optional, for topping)

Instructions

  1. Cook the sausage and veggies: In a large skillet over medium heat, sauté the Italian sausage, onion, and green bell pepper until the sausage is browned and the veggies are softened. Drain any excess grease if needed.
  2. Combine in the crock pot: Add the sausage mixture, marinara sauce, and beef broth to your crock pot. Stir to combine.
  3. Cook: Cover and cook on low for 4-6 hours or high for 2-3 hours.
  4. Add the noodles: About 30 minutes before serving, break the lasagna noodles into pieces and stir them into the soup. Let them cook until tender.
