Simple Italian-Style Chicken & Chorizo Jambalaya

This one-pan cajun chicken and chorizo rice is a simple and flavorful dish that combines tender chicken, spicy chorizo, and aromatic spices with rice and tomatoes for a quick and satisfying meal.

Ingredients
  

  • 1 tbsp olive oil
  • 2 chicken breasts chopped
  • 1 onion diced
  • 1 red pepper thinly sliced
  • 2 garlic cloves crushed
  • 75 grams chorizo sliced
  • 1 tbsp Cajun seasoning
  • 250 grams long grain rice
  • 1 can plum tomatoes (400 grams)
  • 350 ml chicken stock

Instructions
 

Cook the Chicken

  • Start by heating 1 tablespoon of olive oil in a large frying pan with a lid over medium heat.
    Add the chopped chicken breasts and cook for about 5-8 minutes, or until they are golden brown.
    Once done, remove the chicken from the pan and set it aside.

Sauté the Vegetables

  • In the same pan, add the diced onion.
    Cook for 3-4 minutes until the onion becomes soft and translucent.

Add Flavor

  • Toss in the sliced red pepper, crushed garlic cloves, sliced chorizo, and Cajun seasoning.
    Stir everything together and cook for an additional 5 minutes.
    This step will help to infuse all the wonderful flavors.

Combine Ingredients

  • Return the chicken to the pan.
    Then add the long grain rice, can of plum tomatoes, and chicken stock.
    Give it a good stir to mix everything together.

Simmer

  • Cover the pan with the lid and let it simmer for 20-25 minutes.
    This will cook the rice until it's tender and has absorbed all the tasty flavors.
