Simple Italian-Style Chicken & Chorizo Jambalaya
This one-pan cajun chicken and chorizo rice is a simple and flavorful dish that combines tender chicken, spicy chorizo, and aromatic spices with rice and tomatoes for a quick and satisfying meal.

- 1 tbsp olive oil
- 2 chicken breasts chopped
- 1 onion diced
- 1 red pepper thinly sliced
- 2 garlic cloves crushed
- 75 grams chorizo sliced
- 1 tbsp Cajun seasoning
- 250 grams long grain rice
- 1 can plum tomatoes (400 grams)
- 350 ml chicken stock
Cook the Chicken
Start by heating 1 tablespoon of olive oil in a large frying pan with a lid over medium heat.Add the chopped chicken breasts and cook for about 5-8 minutes, or until they are golden brown.Once done, remove the chicken from the pan and set it aside.
Sauté the Vegetables
In the same pan, add the diced onion.Cook for 3-4 minutes until the onion becomes soft and translucent.
Add Flavor
Toss in the sliced red pepper, crushed garlic cloves, sliced chorizo, and Cajun seasoning.Stir everything together and cook for an additional 5 minutes.This step will help to infuse all the wonderful flavors.
Combine Ingredients
Return the chicken to the pan.Then add the long grain rice, can of plum tomatoes, and chicken stock.Give it a good stir to mix everything together.
Simmer
Cover the pan with the lid and let it simmer for 20-25 minutes. This will cook the rice until it's tender and has absorbed all the tasty flavors.
