Ingredients
  

  • 4 boneless, skinless chicken breasts
  • 1 lb fresh mushrooms sliced
  • 1 small onion finely chopped
  • 4 garlic cloves minced
  • 1 can (14.5 oz) diced tomatoes with juices
  • ½ cup chicken broth
  • ¼ cup balsamic vinegar
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp red pepper flakes (optional)
  • 2 tbsp fresh parsley chopped
  • ¼ cup grated Parmesan cheese for garnish

Instructions
 

Prepare the Slow Cooker

  • Start by spreading the sliced mushrooms and chopped onion evenly across the bottom of your slow cooker.
    These ingredients will add a delicious base of flavor to the dish as it cooks.

Add the Chicken

  • Place the chicken breasts on top of the mushroom and onion mixture.

Mix the Sauce

  • In a separate bowl, combine the minced garlic, diced tomatoes (with their juice), chicken broth, balsamic vinegar, dried oregano, dried basil, salt, black pepper, and red pepper flakes (if using).
    Stir everything together well to make sure the flavors are evenly mixed.

Pour the Sauce Over the Chicken

  • Carefully pour the tomato and herb mixture over the chicken breasts, making sure they are fully covered by the sauce.

Cook

  • Cover the slow cooker with the lid and cook on the low setting for 6-7 hours or on high for 3-4 hours, until the chicken is fully cooked and tender.

Finish and Serve

  • Just before serving, sprinkle the dish with chopped fresh parsley and grated Parmesan cheese for a fresh and flavorful finish.
