Simple Italian Sausage Soup
This easy-to-make Italian sausage soup combines savory sausage, tender vegetables, beans, and spinach for a hearty, flavorful meal perfect for beginners.

- 1 pound Italian sausage
- 1 clove Garlic minced
- 2 cans Italian-style stewed tomatoes (14.5 oz)
- 1 cup Carrots Sliced
- ¼ tsp Salt
- ¼ tsp Black pepper ground
- 1 can Great Northern beans (14.5 oz) undrained
- 2 Small Zucchini cubed
- 2 cups Fresh spinach, packed, rinsed, and torn into pieces
Cook the Sausage
Heat a stockpot or Dutch oven over medium-high heat.Add the Italian sausage and minced garlic. Cook, stirring occasionally, for about 5-7 minutes, or until the sausage is browned.
Add Broth and Vegetables
Stir in the beef broth, Italian-style stewed tomatoes, and sliced carrots.Season with salt and black pepper.Reduce the heat to medium-low, cover, and let it simmer for 15 minutes.
Add Beans and Zucchini
Stir in the undrained great Northern beans and cubed zucchini.Cover the pot again and let it simmer for another 15 minutes, or until the zucchini is tender.
Add Spinach and Finish
Remove the pot from heat and add the torn spinach.Replace the lid and let the spinach wilt for a few minutes.
