Preheat your oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top. This will help the chicken stay crispy. Set it aside. Gently pound the chicken breasts to an even thickness using a meat mallet or rolling pin. Season both sides with salt and pepper.
Place flour in a shallow bowl. In another bowl, beat the eggs until smooth. In a third bowl, mix together the panko breadcrumbs, Parmesan cheese, garlic powder, onion powder, and dried oregano.
Dredge each chicken breast in flour, shaking off any excess. Next, dip it into the beaten eggs, ensuring it’s fully coated. Finally, press it into the breadcrumb mixture, making sure all sides are covered. Set the chicken aside on a plate.
Spoon a generous amount of marinara sauce over each piece of chicken. Sprinkle with shredded mozzarella cheese and any remaining Parmesan mixture.
Turn your oven to the broil setting. Place the chicken under the broiler and watch carefully as the cheese melts and turns golden brown with some spots, about 2 minutes.
Remove the chicken from the oven and let it cool slightly. Transfer to plates, top with fresh basil, and serve with the remaining marinara sauce on the side.
