- 1 lb Italian sausage (casings removed)
- ½ cup onion chopped
- 4 cloves garlic minced
- 1 can (28 oz.) Italian-style plum tomatoes drained and roughly chopped
- 1 ½ cups heavy cream
- 1 cup spinach leaves coarsely chopped
- 1 box (12 oz.) bow tie pasta
- 2 tbsp olive oil
- Optional: Red pepper flakes, to taste
Cook the Pasta
Begin by boiling the bow tie pasta in a large pot of salted water according to the package directions. Once the pasta is tender, drain it and set it aside.
Prepare the Sausage
In a large skillet, heat the olive oil over medium heat. Add the Italian sausage, breaking it into small pieces with a spoon. Cook until the sausage is browned and fully cooked through.
Sauté the Vegetables
Add the chopped onion and minced garlic to the skillet. Sauté until the onion becomes soft and translucent, and the garlic is fragrant, about 2-3 minutes.
Combine with Tomatoes
Stir in the chopped plum tomatoes. Let them cook for about 3-4 minutes to blend the flavors.
Mix in the Pasta and Spinach
