Ingredients
  

  • 1 lb Italian sausage (casings removed)
  • ½ cup onion chopped
  • 4 cloves garlic minced
  • 1 can (28 oz.) Italian-style plum tomatoes drained and roughly chopped
  • 1 ½ cups heavy cream
  • 1 cup spinach leaves coarsely chopped
  • 1 box (12 oz.) bow tie pasta
  • 2 tbsp olive oil
  • Optional: Red pepper flakes, to taste

Instructions
 

Cook the Pasta

  • Begin by boiling the bow tie pasta in a large pot of salted water according to the package directions.
    Once the pasta is tender, drain it and set it aside.

Prepare the Sausage

  • In a large skillet, heat the olive oil over medium heat.
    Add the Italian sausage, breaking it into small pieces with a spoon.
    Cook until the sausage is browned and fully cooked through.

Add Some Heat (Optional)

  • If you want a bit of a kick, sprinkle in some red pepper flakes with the sausage.

Sauté the Vegetables

  • Add the chopped onion and minced garlic to the skillet.
    Sauté until the onion becomes soft and translucent, and the garlic is fragrant, about 2-3 minutes.

Combine with Tomatoes

  • Stir in the chopped plum tomatoes.
    Let them cook for about 3-4 minutes to blend the flavors.

Make the Creamy Sauce

  • Pour the heavy cream into the skillet. Bring the mixture to a simmer and cook for about 5 minutes, or until the sauce starts to thicken.

Mix in the Pasta and Spinach

  • Add the cooked bow tie pasta and chopped spinach leaves to the skillet.
    Toss everything together gently, allowing the spinach to wilt and the pasta to be evenly coated with the sauce.

Serve

  • Remove from heat and serve warm. If you like, top with grated Parmesan cheese or fresh herbs for extra flavor.
