Savory Italian-Style Paprika Pork

- 1 tbsp olive oil
- 2 onions finely sliced
- 400 grams pork fillet trimmed of fat and cut into thick strips
- 250 grams mushrooms sliced
- 1 ½ tbsp smoked paprika
- 1 tbsp tomato purée
- 200 ml chicken stock
- 100 ml soured cream
- Egg noodles, tagliatelle, or rice (for serving)
Sauté the Onions
Heat the olive oil in a large pan over medium heat.Add the finely sliced onions to the pan and cook for about 10 minutes, stirring occasionally, until the onions are soft and golden brown.
Cook the Pork and Mushrooms
Add the pork strips to the pan with the onions.Increase the heat to high and cook for 3-4 minutes, until the pork is nicely browned.Add the sliced mushrooms and continue to cook for another 2 minutes.Sprinkle in the smoked paprika and stir well.Cook for an additional minute to release the paprika’s flavor.
Create the Sauce
Stir in the tomato purée until well combined with the pork and mushrooms.Pour in the chicken stock and bring the mixture to a gentle simmer.Let it cook for 5-8 minutes, or until the pork is cooked through and the sauce has thickened slightly.
Finish and Serve
