Quick and Simple Italian Sausages with Oregano, Mushrooms & Olives

This simple sausage and mushroom skillet combines golden-brown sausage pieces with a flavorful tomato and olive sauce, simmered to perfection and served over mashed potatoes or pasta.

Ingredients
  

  • 450 grams pack of reduced-fat sausages
  • 1 tsp sunflower oil
  • 2 tsp dried oregano
  • 2 garlic cloves sliced
  • 400 grams can of chopped or cherry tomatoes
  • 200 ml beef stock
  • 100 grams pitted black olives (in brine)
  • 500 grams pack of mushrooms thickly sliced

Instructions
 

Prepare the Sausages

  • Use kitchen scissors to cut the sausages into small meatball-sized pieces.
    Heat a large pan over medium heat and add the sunflower oil.
    Once the oil is hot, add the sausage pieces.
    Cook them for about 5 minutes, turning occasionally, until they’re golden brown all over.

Add Flavor

  • Sprinkle in the dried oregano and add the sliced garlic.
    Cook for another minute to release their flavors.
    Next, add the chopped tomatoes, beef stock, olives, and sliced mushrooms to the pan.
    Stir everything together.

Simmer and Serve

  • Reduce the heat to a simmer and cook for 15 minutes.
    This will give the sausages time to cook through and the sauce to thicken a bit.
    Once done, you can serve this savory mixture over mashed potatoes or pasta.
