Quick and Easy Italian Chicken Chasseur
This chicken chasseur recipe features tender chicken simmered in a rich, flavorful sauce with mushrooms, garlic, and thyme for a comforting and delicious meal.

- 1 tsp olive oil
- 25 grams butter
- 4 chicken legs
- 1 onion chopped
- 2 garlic cloves crushed
- 200 grams small button or chestnut mushrooms
- 225 ml red wine
- 2 tbsp tomato purée
- 2 thyme sprigs
- 500 ml chicken stock
Brown the Chicken
Season the chicken legs with salt and pepper.Place them in the hot pan and cook for about 5 minutes on each side, until they are golden brown.Once browned, remove the chicken legs from the pan and set them aside on a plate.
Cook the Vegetables
In the same pan, add the remaining butter.Once melted, add the chopped onion and cook for about 5 minutes until the onion is soft and translucent.
Add Garlic and Mushrooms
Add the crushed garlic cloves to the pan and cook for 1 minute.Then, add the mushrooms and cook for an additional 2 minutes.
Add Wine and Tomato Purée
Pour in the red wine and stir in the tomato purée.Let the mixture bubble and reduce for about 5 minutes.
Simmer the Sauce
Add the thyme sprigs and pour in the chicken stock.Stir everything together, then place the chicken legs back into the pan.
Final Touches
Once the chicken is done, remove it from the pan and keep it warm.Increase the heat and let the sauce boil rapidly for about 10 minutes, until it thickens and becomes syrupy.
