  • Step 1: Prepare Your Tools
  • Preheat your oven to 350°F and prepare a 9-by-5-inch loaf pan by coating it with cooking spray. This prevents sticking and ensures easy removal of the loaf.
  • Step 2: Mix the Ingredients
  • In a large bowl, combine all the ingredients from puréed chipotle chiles to ground turkey. Mix thoroughly until all components are evenly distributed. This step is crucial to ensure the flavors are consistent throughout the meatloaf. Transfer the mixture to the prepared loaf pan and smooth the top.
  • Step 3: Initial Bake
  • Place the meatloaf in the oven and bake, uncovered, for 30 minutes. This allows the loaf to set and begin cooking through.
  • Step 4: Glaze and Final Bake
  • In a small bowl, stir together the remaining tomato sauce, ketchup, and Tabasco. Evenly brush this glaze over the partially baked meatloaf. Cover it with foil to prevent drying out, and return to the oven for an additional 30 minutes, or until the internal temperature reaches 165°F.   • Turkey blend matters: Use a mix of regular ground turkey and ground turkey breast — all breast meat is too lean and will result in a dry, crumbly loaf.

  • Oats as binder: Quick oats absorb moisture beautifully and keep the loaf together. Old-fashioned oats can be used but pulse them briefly in a blender first.
  • Chipotle heat: 4-5 teaspoons gives a noticeable but not overwhelming heat. Start with 2 teaspoons for a milder version — you can always add more next time.
  • Internal temperature: Pull the meatloaf at exactly 165°F — overbaking is the number one cause of dry turkey meatloaf.
  • Rest before slicing: Let it sit for 10 minutes after baking — this step is non-negotiable for clean slices and juicy results.
