Easy Italian Pasta Primavera With Turkey Sausage

This easy pasta dish combines savory Italian sausage, fresh veggies, and a sprinkle of Parmesan cheese for a flavorful and satisfying meal.

Ingredients
  

  • 1 (16-ounce) package farfalle pasta uncooked
  • 1 pound hot Italian turkey sausage sliced into 1/2-inch pieces
  • 1/2 cup olive oil divided
  • 4 cloves garlic minced
  • 1/2 onion diced
  • 2 small zucchini chopped
  • 2 small yellow squash chopped
  • 6 roma (plum) tomatoes chopped
  • 1 green bell pepper chopped
  • 20 fresh basil leaves
  • 2 tsp chicken bouillon granules
  • 1/2 tsp red pepper flakes
  • 1/2 cup Parmesan cheese grated

Instructions
 

Cook the Pasta

  • Fill a large pot with water, add a pinch of salt, and bring it to a boil.
    Add the farfalle pasta and cook for 8 to 10 minutes until it’s al dente (firm to the bite).
    Drain the pasta and set it aside.

Prepare the Sausage and Veggies

  • Heat a large skillet over medium heat and cook the sausage slices until they are evenly browned.
    Once cooked, set the sausage aside.
    In the same skillet, add 1/4 cup of olive oil and heat it up.
    Add the minced garlic and diced onion to the skillet.
    Cook until the onion becomes tender.Mix in the chopped zucchini, yellow squash, tomatoes, and bell pepper.
    Cook for a few minutes.Tear the fresh basil leaves and add them to the skillet.Sprinkle in the chicken bouillon granules and red pepper flakes.
    Stir well.
    Drizzle in the remaining 1/4 cup of olive oil and continue to cook the mixture for about 10 minutes until the veggies are tender.

Combine Everything

  • Add the cooked pasta and browned sausage to the skillet with the veggie mixture.
    Stir everything together and cook for another 5 minutes, or until everything is heated through.
    Sprinkle the grated Parmesan cheese over the top and give it a final stir.
