Easy Italian Chicken Stew

This chicken stew is a simple, flavorful dish that combines tender chicken, vegetables, and beans in a savory broth, perfect for a comforting meal.

Ingredients
  

  • 2 tbsp sunflower oil
  • 400 grams boneless, skinless chicken thighs trimmed and cut into chunks
  • 1 onion finely chopped
  • 3 carrots finely chopped
  • 3 celery sticks finely chopped
  • 2 sprigs of thyme (or ½ teaspoon dried thyme)
  • 1 bay leaf (fresh or dried)
  • 600 ml vegetable or chicken stock
  • 2 cans haricot beans (400 grams each), drained
  • Chopped parsley (for serving)

Instructions
 

Prepare Your Ingredients

  • Start by heating the sunflower oil in a large pan over medium heat.
    Add the chicken chunks to the pan.
    Cook them until they turn a light brown color.

Cook the Vegetables

  • Add the chopped onion, carrots, and celery to the pan with the chicken.
    Continue to cook for a few more minutes until the vegetables begin to soften.

Add Flavor

  • Stir in the thyme and bay leaf.
    Then pour in the vegetable or chicken stock.
    Bring everything to a boil.
    Once boiling, give it a good stir, lower the heat, cover the pan, and let it simmer for about 40 minutes.
    This will make the chicken nice and tender.

Finish the Stew

  • After 40 minutes, stir in the drained haricot beans.
    Let the stew simmer for an additional 5 minutes.
    This will warm the beans through and blend all the flavors together.

Serve

  • Sprinkle some chopped parsley on top before serving.
