Easy Italian Chicken Stew

- 2 tbsp sunflower oil
- 400 grams boneless, skinless chicken thighs trimmed and cut into chunks
- 1 onion finely chopped
- 3 carrots finely chopped
- 3 celery sticks finely chopped
- 2 sprigs of thyme (or ½ teaspoon dried thyme)
- 1 bay leaf (fresh or dried)
- 600 ml vegetable or chicken stock
- 2 cans haricot beans (400 grams each), drained
- Chopped parsley (for serving)
Prepare Your Ingredients
Start by heating the sunflower oil in a large pan over medium heat.Add the chicken chunks to the pan.Cook them until they turn a light brown color.
Cook the Vegetables
Add the chopped onion, carrots, and celery to the pan with the chicken. Continue to cook for a few more minutes until the vegetables begin to soften.
Add Flavor
Stir in the thyme and bay leaf.Then pour in the vegetable or chicken stock.Bring everything to a boil.Once boiling, give it a good stir, lower the heat, cover the pan, and let it simmer for about 40 minutes.This will make the chicken nice and tender.
Finish the Stew
After 40 minutes, stir in the drained haricot beans.Let the stew simmer for an additional 5 minutes.This will warm the beans through and blend all the flavors together.
