Easy Italian Chicken Parmesan Bake
This easy chicken parmesan bake combines crispy breaded chicken with a rich tomato sauce and melted cheese, perfect for beginners.

- 2 large, skinless chicken breasts (halved through the middle)
- 2 eggs beaten
- 75 grams breadcrumbs
- 75 grams parmesan cheese grated
- 1 tbsp olive oil
- 2 garlic cloves crushed
- 345 ml passata (half of a 690ml jar)
- 1 tsp caster sugar
- 1 tsp dried oregano
- 125 grams ball of light mozzarella (Half, torn into pieces)
- Salt and pepper to taste
Prepare the Chicken
Begin by slicing the chicken breasts in half through the middle, creating four thin pieces.Place each piece between two sheets of cling film, and using a rolling pin, gently flatten the chicken until each piece is about the thickness of a £1 coin.
Coat the Chicken
Beat the eggs in a bowl.In a separate bowl, combine 75g of breadcrumbs with half of the grated parmesan (about 37g).Dip each piece of chicken into the beaten eggs, ensuring it's well coated, then press the chicken into the breadcrumb and parmesan mixture, making sure the crumbs stick evenly.Once coated, place the chicken on a plate and refrigerate while preparing the sauce.
Make the Tomato Sauce
Heat 1 tablespoon of olive oil in a pan over medium heat.Add the crushed garlic and sauté for about 1 minute until fragrant.Pour in half a jar of passata (345ml), then stir in 1 teaspoon of caster sugar and 1 teaspoon of dried oregano.Season the sauce with a pinch of salt and pepper, then let it simmer gently for 5-10 minutes.
Cook the Chicken
Preheat your grill to High.Grill the chicken pieces for about 5 minutes on each side, or until golden and cooked through.Once done, set aside.
Assemble the Bake
In a shallow ovenproof dish, pour the prepared tomato sauce to cover the bottom.Arrange the cooked chicken pieces on top of the sauce.
Top with Cheese & Grill
Scatter torn pieces of the mozzarella over the chicken and sprinkle the remaining parmesan cheese.Place the dish under the grill for 3-4 minutes until the cheese has melted and the sauce is bubbling.
Serve
Once the cheese is golden and melted, your Chicken Parmesan Bake is ready to serve!Pair it with some vegetables, salad, or your choice of pasta or potatoes.
