Ingredients

  • 1 pound lean ground beef: Provides a hearty base. Use turkey for a lighter version.
  • ¼ cup chopped onion: Adds foundational flavor. Can replace with shallots for a milder taste.
  • ¼ cup chopped green bell pepper: Provides a sweet crunch. Red or yellow bell pepper can substitute for a sweeter option.
  • ¾ cup ketchup or to taste: Forms the sauce base with tang and sweetness. Tomato sauce with a bit of vinegar can substitute.
  • 1 tablespoon brown sugar or to taste: Sweetens the mixture, balancing the flavors. Honey or maple syrup can be used as alternatives.
  • 1 teaspoon yellow mustard or to taste: Adds tang and depth. Dijon can be used for a more complex flavor.
  • ½ teaspoon garlic powder: Enhances overall flavor with a touch of warmth. Substitute with minced fresh garlic if desired.
  • Salt and ground black pepper to taste: Essential for seasoning and enhancing all other flavors.
  • 6 hamburger buns split: Serves as the holder for our delicious filling. Choose whole grain for extra fiber.

Instructions

  • Step 1: Brown the Beef
  • In a large skillet over medium heat, cook the ground beef until it’s no longer pink, breaking it up into crumbles as it cooks. This ensures even cooking and a nice texture. Drain any excess fat to keep the dish from becoming greasy.
  • Step 2: Soften the Vegetables
  • Add the chopped onion and green bell pepper to the beef. Cook for about 5 minutes, stirring frequently, until the vegetables are soft. This step melds the flavors while keeping a slight crunch from the peppers.
  • Step 3: Create the Sauce
  • Stir in the ketchup, brown sugar, mustard, and garlic powder. Adjust the seasoning with salt and pepper. Allow to simmer for 15 minutes, stirring occasionally. You’ll see the sauce thicken and the flavors deepen during this time.
  • Step 4: Assemble the Sloppy Joes
  • Spoon the mixture generously onto the split hamburger buns. Serve immediately while the filling is hot, ensuring the buns soak up some of the delicious juices.

Notes

  • Drain the fat: After browning the beef, drain excess grease before adding the vegetables and sauce — this keeps the filling from getting greasy.
  • Simmer uncovered: Don't cover the pan during the 15-minute simmer — you need the liquid to evaporate and the sauce to thicken properly.
  • Toast the buns: A quick toast on the buns prevents them from getting soggy under the saucy filling.
  • Adjust to taste: The recipe calls for ketchup, mustard, and brown sugar to taste — start with the listed amounts and adjust sweetness or tang to your preference.
  • Toppings: Shredded cheddar, dill pickles, jalapeños, or coleslaw on top take these to the next level.
  • Make ahead: The filling keeps in the fridge for up to 3 days and actually tastes better the next day as the flavors develop.
  • Freezing: Cool completely and freeze in an airtight container for up to 3 months. Thaw overnight in the fridge and reheat on the stovetop.
