Ingredients
  

  • 2 English cucumbers very thinly sliced: The base of the salad, provides crisp texture and hydrating qualities.
  • ½ large red onion very thinly sliced: Adds a sharp, savory note and vibrant color.
  • ¼ cup white wine vinegar: Forms the tangy dressing. Apple cider vinegar is a suitable alternative.
  • 1 tablespoon honey or agave nectar: Balances the acidity of the vinegar with a hint of sweetness. Use maple syrup if needed.
  • 1 teaspoon sea salt: Enhances flavor drawing out moisture and sweetness from the cucumbers.
  • 2 tablespoons chopped fresh dill: Adds a fresh herbaceous flavor. Substitute with parsley if dill is unavailable.
  • Chopped fresh chives optional, for garnish: Provides a mild oniony kick without overpowering.
  • Freshly ground black pepper: For a subtle spice and aromatic warmth.

Instructions
 

  • Step 1: Prepare the Vegetables
  • Using a sharp knife or mandoline, slice the cucumbers and red onion as thinly as possible. This ensures maximum flavor absorption and even seasoning. Place them in a large mixing bowl.
  • Step 2: Make the Dressing
  • Combine white wine vinegar, honey, and sea salt in a small bowl. Whisk until the honey is fully integrated into the vinegar. This balance of sweet and salty will marry well with the crunchy cucumbers.
  • Step 3: Assemble the Salad
  • Pour the dressing over the sliced cucumbers and onions in the mixing bowl. Toss well, ensuring every slice is coated. Let it chill for 20 minutes to allow the flavors to meld and the cucumbers to become slightly softened yet crisp.

Notes

Slice cucumbers as thin as possible — a mandoline slicer makes this incredibly easy and produces perfect uniform slices!
Salt the cucumbers first and let sit 10 minutes to draw out excess moisture — this prevents a watery dressing!
Add dill and chives right before serving to maintain their vibrant color and freshness.
For a creamier version add a dollop of Greek yogurt or sour cream to the dressing.
Best enjoyed the same day — cucumbers continue releasing moisture and can get watery after 24 hours!
