- 2 lbs Boneless Skinless Chicken Thighs
- Kosher Salt and Fresh Ground Black Pepper
- ⅓ cup Bourbon
- ¾ cup Packed Brown Sugar
- ¾ cup Low-sodium Soy Sauce
- 2 Cloves Minced Garlic
- 2 tbsp Cornstarch
- 3 tbsp Cold Water
Step 1: Prepare the chicken Pat the chicken thighs dry with a paper towel and season generously on both sides with kosher salt and black pepper. Place in a single layer at the bottom of your crockpot.
Step 2: Mix the sauce In a medium bowl whisk together the bourbon, brown sugar, soy sauce, and minced garlic until the brown sugar mostly dissolves.
Step 3: Cook Pour the sauce evenly over the chicken. Cover and cook on LOW for 4 hours or HIGH for 3 hours. Don't lift the lid during cooking!
Step 4: Thicken the sauce About 30 minutes before done, whisk the cornstarch and cold water together in a small bowl until smooth. Pour into the crockpot and stir gently.
Step 5: Final simmer Replace the lid and cook for the final 30 minutes until the sauce thickens into a gorgeous glaze.
Step 6: Serve whole or shred with two forks. Serve hot over rice garnished with sliced green onions!
