Notes

  • Cast iron skillet: The best pan for blackening salmon — it holds high heat evenly and creates the most flavorful crust. A stainless steel pan works too.
  • Don't move the salmon: Let it cook undisturbed for the full 5-6 minutes per side — moving it too early prevents the crust from forming properly.
  • Skinless fillets: Much easier to flake into the bowl. Ask your fishmonger to remove the skin or buy pre-skinned fillets.
