Ingredients
  

  • Ingredient Group 1: For the chicken
  • 4 bone-in skin-on chicken thighs
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • Ingredient Group 2: Garlic butter sauce
  • 3 tbsp butter
  • 4 cloves garlic minced
  • 1 tbsp fresh parsley chopped
  • 1 tbsp lemon juice

Instructions
 

  • Preheat your oven to 425°F. Pat chicken thighs completely dry with paper towels — this is the key to crispy skin!
  • Mix garlic powder, onion powder, smoked paprika, salt, and pepper together. Season both sides of the chicken thighs generously.
  • Heat olive oil in an oven-safe skillet over medium-high heat. Place chicken thighs skin-side down and sear for 5-6 minutes without moving until skin is deep golden and crispy.
  • Flip chicken thighs and transfer skillet to the preheated oven. Bake for 25-30 minutes until internal temperature reaches 165°F.
  • While chicken bakes melt butter in a small saucepan over medium heat. Add minced garlic and cook for 1-2 minutes until fragrant. Stir in lemon juice and parsley.
  • Remove chicken from oven and pour garlic butter sauce over the top. Serve immediately and enjoy!

Notes

Storage: Store in an airtight container in the fridge for up to 4 days. Reheat: Warm in a 375°F oven for 10-12 minutes to keep the skin crispy. Avoid the microwave. Freezer: Freeze for up to 3 months. Thaw overnight in fridge before reheating. Boneless option: Use boneless skinless thighs and reduce oven time by 10 minutes. Make the garlic butter sauce fresh when serving from frozen.
