Comforting Creamy Italian Tuscan Chicken Pasta

This creamy Tuscan chicken pasta features tender chicken, sun-dried tomatoes, and a rich, flavorful sauce, all tossed with penne pasta for a satisfying and easy meal.

Ingredients
  

  • 2 tbsp olive oil
  • 1 lb chicken breasts sliced into thin strips
  • ½ tsp salt
  • ¼ tsp black pepper
  • 3 cloves garlic minced
  • 1 cup sun-dried tomatoes chopped
  • 1 cup heavy cream
  • 1 cup chicken broth
  • ½ cup grated Parmesan cheese
  • 1 tsp dried basil
  • ½ tsp dried oregano
  • 8 oz penne pasta
  • Fresh basil leaves for garnish (optional)

Instructions
 

  • Cook the Pasta:
    Bring a large pot of salted water to a boil.
    Add the penne pasta and cook according to the package instructions until al dente.
    Drain and set aside.
  • Prepare the Chicken:
    While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
    Season the chicken strips with salt and pepper.
    Add the chicken to the skillet and cook until golden brown and cooked through, about 5-7 minutes.
    Remove the chicken from the skillet and set aside.
  • Make the Sauce:
    In the same skillet, add the minced garlic and cook for about 30 seconds until fragrant. Stir in the sun-dried tomatoes and cook for another 2 minutes.
    Pour in the heavy cream and chicken broth, and bring to a simmer.
    Cook for 3-4 minutes, allowing the sauce to thicken slightly.
  • Combine Ingredients:
    Return the cooked chicken to the skillet and stir in the grated Parmesan cheese, dried basil, and dried oregano.
    Cook for another 2 minutes until the cheese is melted and the sauce is creamy.
  • Add Pasta:
    Add the cooked penne pasta to the skillet and toss everything together until the pasta is well coated with the sauce.
  • Serve:
    Garnish with fresh basil leaves, if desired.
    Serve the creamy Tuscan chicken pasta warm.
