- 2 tbsp olive oil
- 1 lb chicken breasts sliced into thin strips
- ½ tsp salt
- ¼ tsp black pepper
- 3 cloves garlic minced
- 1 cup sun-dried tomatoes chopped
- 1 cup heavy cream
- 1 cup chicken broth
- ½ cup grated Parmesan cheese
- 1 tsp dried basil
- ½ tsp dried oregano
- 8 oz penne pasta
- Fresh basil leaves for garnish (optional)
Cook the Pasta: Bring a large pot of salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente. Drain and set aside. Prepare the Chicken: While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Season the chicken strips with salt and pepper. Add the chicken to the skillet and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside. Make the Sauce: In the same skillet, add the minced garlic and cook for about 30 seconds until fragrant. Stir in the sun-dried tomatoes and cook for another 2 minutes. Pour in the heavy cream and chicken broth, and bring to a simmer. Cook for 3-4 minutes, allowing the sauce to thicken slightly. Combine Ingredients: Return the cooked chicken to the skillet and stir in the grated Parmesan cheese, dried basil, and dried oregano. Cook for another 2 minutes until the cheese is melted and the sauce is creamy. Add Pasta: Add the cooked penne pasta to the skillet and toss everything together until the pasta is well coated with the sauce. Serve: Garnish with fresh basil leaves, if desired.
