Ingredients
  

  • 8 oz lo mein noodles or spaghetti
  • 2 cups cooked chicken shredded or sliced
  • 3 tbsp soy sauce
  • 2 tbsp sesame oil
  • 1 tbsp honey
  • 2 cloves garlic minced
  • 1 tsp fresh ginger grated
  • 1 tbsp rice vinegar
  • 1 tsp sriracha optional
  • 2 green onions sliced
  • 1 tbsp sesame seeds
  • ¼ cup shredded carrots optional

Instructions
 

  • Cook noodles according to package directions. Drain and set aside.
  • In a small bowl whisk together soy sauce, sesame oil, honey, garlic, ginger, rice vinegar, and sriracha.
  • Heat a large skillet or wok over medium-high heat. Add the cooked chicken and pour sauce over it. Toss to coat and heat through about 2 minutes.
  • Add cooked noodles to the skillet and toss everything together until well combined.
  • Serve topped with green onions, sesame seeds, and shredded carrots. Enjoy!

Notes

Storage: Store in an airtight container in the fridge for up to 4 days. Reheat: Toss in a hot skillet with a splash of soy sauce or water to loosen noodles. Protein swap: Try shrimp, beef, pork, or tofu instead of chicken. Gluten free: Use tamari instead of soy sauce and rice noodles instead of lo mein. Noodle swap: Spaghetti, linguine, rice noodles, or ramen all work great.
