  • ¼ teaspoon salt, more to taste
  • 1 tablespoon grated or finely minced fresh ginger
  • 2 large cloves garlic, pressed or minced
  • Pinch of red pepper flakes
  • 2 cups cooked brown rice
  • 1 cup greens (optional), such as spinach, baby kale or tatsoi
  • 3 green onions, chopped
  • 1 tablespoon reduced-sodium tamari or soy sauce
  • 1 teaspoon toasted sesame oil
  • Chili-garlic sauce or sriracha, for serving (optional)

Instructions

1. Cook the Eggs

Heat 1 ½ teaspoons of oil in a skillet over medium-high heat. Add whisked eggs and cook until lightly set. Transfer to a bowl and set aside.

2. Saute the Vegetables

Heat 1 tablespoon of oil in the same skillet. Add onion, carrots, and additional veggies. Cook until tender and golden, about 5 minutes.

3. Prepare the Rice

Add ginger, garlic, and red pepper flakes to the skillet. Stir in cooked brown rice and cook until heated through and slightly crispy, about 5 minutes.

4. Combine Ingredients
