Ingredients
- 50g fresh white breadcrumbs
- 4 tablespoons finely grated Parmesan cheese
- 500g lean minced beef
- 1 onion, finely chopped
- 100g pancetta, chopped
- 1 garlic clove, finely chopped
- 1 beaten egg
- 1 teaspoon tomato purée
Instructions
Step 1: Prepare the Oven and Tin
- Preheat your oven to 190°C (170°C fan) or Gas Mark 5.
- Line the long sides and base of a 2lb loaf tin with double thickness baking parchment to prevent sticking.
Step 2: Mix the Ingredients
- In a small bowl, mix 2 tablespoons of the breadcrumbs with 2 tablespoons of the grated Parmesan cheese and set aside for later.
- In a large bowl, combine the remaining breadcrumbs, Parmesan cheese, minced beef, chopped onion, chopped pancetta, and chopped garlic.
- Add the beaten egg and tomato purée. Season generously with salt and pepper. Use your hands to mix everything together thoroughly until well combined.
Step 3: Form and Bake
- Press the meat mixture into the prepared loaf tin, smoothing the top.
- Sprinkle the reserved breadcrumb and Parmesan mixture evenly over the top of the meatloaf.
- Bake in the preheated oven for 40-45 minutes, or until the top is golden and crispy. If the top doesn’t brown enough, place the tin under the grill for 5 minutes to achieve a golden finish.
Step 4: Cool and Serve
- Allow the meatloaf to cool in the tin for 5 minutes.
- Lift the meatloaf out of the tin using the parchment paper and transfer it to a cutting board.
- Slice and serve with your favorite sides, such as potatoes and green beans.
