Instructions

Step 1: Prepare the Sauce

In a small bowl, whisk together soy sauce, sesame oil, sugar, honey, oyster sauce, and 1 tablespoon of warm water until well combined. Set aside.

Step 2: Cook the Noodles

Bring a pot of water to a boil and add the sweet potato glass noodles. Cook according to the package instructions (usually 6–8 minutes) until soft and chewy. Drain immediately and rinse under cold water to stop the cooking process. Transfer the noodles to a mixing bowl, add 1 tablespoon of the prepared sauce, and toss to coat. This helps the noodles absorb flavor while you prepare the rest of the dish.

Step 3: Make the Omelette

In a non-stick pan over medium heat, add 1 teaspoon of vegetable oil. Pour in the beaten eggs and swirl the pan to create an even layer. Cook until set, then carefully flip and cook the other side for a few seconds. Remove from the pan, roll the omelet, and slice into thin strips. Set aside.

Step 4: Sauté the Vegetables

Using the same pan (no need to wash), add a little more oil if needed. Sauté the minced garlic and sliced onions over medium heat until fragrant and slightly softened, about 2 minutes. Add the julienned carrots and stir-fry for 2 minutes until slightly tender but still crisp. Toss in the blanched spinach and bean sprouts, stir-frying for another minute. Step 5: Cook the Beef

In the same pan, heat 1 teaspoon of oil if needed. Add the thinly sliced beef and stir-fry until fully cooked and slightly caramelized, about 2–3 minutes. Once done, transfer the beef to the mixing bowl.

Step 6: Assemble and Serve

Pour the remaining sauce over the noodles, vegetables, and beef. Sprinkle with toasted sesame seeds and gently toss everything together until well mixed. Serve immediately and enjoy!
